Date and Macadamia Muffins

1 cup plain flour
2/3 cup EQUAL SPOONFUL
1 cup chopped dates
1 cup self-raising flour
1 cup wholemeal self-raising flour
2 Tsp. grated orange rind
1 cup low-fat milk
½ cup canola oil
½ cup raw macadamia nuts, roughly chopped
1. Preheat the oven to 180ºC. Grease a 12 hole, ½ cup muffin tin.
2. Combine the EQUAL, dates, self-raising flour and wholemeal self-raising flour in a large bowl.
3. Whisk the eggs, orange rind, milk and oil in another bowl until smooth. Add to the mixture and stir until just combined.
4. Spoon into the muffin tins and sprinkle with the nuts. Bake for 20 minutes or until lightly browned. Lift them out onto a wire rack to cool.
