Overnight Oats with Strawberry Chia Jam
Prep: 15 mins | Cooking time: 5 mins + Overnight Chill | Serves: 2
1 cup rolled oats
1 cup milk
½ cup greek style yogurt
2 Tsp. chia seeds
1 EQUAL SACHET
4 Tsp. finely chopped pistachios, to garnish
½ cup fresh berries, to serve
Mint leaves, to serve
BERRY CHIA JAM
3/4 cup strawberries, hulled, quartered
½ cup frozen raspberries, thawed
2 EQUAL SACHETS
1/4 cup chia seeds
1. To make the berry chia jam, put strawberries and raspberries and 1/4 cup water into a small saucepan over medium heat and cook for 3 minutes, stirring continuously or until berries begin to breakdown. Mash the berries while stirring to create a pulpy mixture. Remove from the heat. Stir in EQUAL and Chia seeds. Transfer to a bowl and refrigerate for 6 hours or overnight.
2. Meanwhile, put oats, nilk, yogurt, chia, EQUAL and cinnamon into a large bowl, stir to combine. Cover with plastic wrap, then refrigerate overnight.
3. Serve in glasses with rims decorated with pistachios. Dollop with a little of the strawberry chia jam and serve topped with fresh berries and mint.
