Quinoa Bircher with Almonds, Blueberries and Lime

1 cup cooked quinoa
2 Tsp. cinnamon
1 Tbsp. sultanas
1 cup almond milk (or low fat, soy)
2 Tbsp. fresh lime juice
2 Tbsp. EQUAL SPOONFUL
½ cup fresh blueberries
1 Tbsp. flaked almonds
1. Combine the quinoa, cinnamon, sultanas, almond milk, lime juice and EQUAL in a bowl and stir to combine.
2. Place in an airtight container preferably overnight, to allow the quinoa to absorb the milk. In the morning, grate the apple and mix through the quinoa.
3. Serve immediately with fresh blueberries, flaked almonds and drizzle with extra honey or an extra teaspoon of EQUAL if desired.
