Sushi Sandwiches

Ingredients

6 slices sandwich wholegrain bread, crusts removed
½ avocado, diced
2 chicken tenderloins, poached, shredded
1 small carrot, peeled, cut into matchsticks
½ small cucumber, cut into matchsticks
¼ small red capsicum, cut into matchsticks
Fruit, to serve

Method

1. Put a slice of bread onto a flat dry surface. Use a rolling pin to flatten slightly. Repeat with remaining bread. 

2. Mash avocado and lemon juice together in a medium bowl. Spread over vread, leaving a 2cm strip bare along 1 edge. ON the opposite edge to bare edge, arrange carrot, cucumber, capsicum and chicken. 

3. Roll up from vegetable side to enclose filling. Wrap sandwich logs tightly in plastic wrap and refrigerate for 30 minutes. Remove plastic wrap and slice each log into 3, then pack 6 pieces into each lunch box. Serve with fruit.
